Well, after the successful salsa incident a couple weeks ago, we're doing a salsa cooking competition at work on Tuesday. I'll be taking a serving of my homemade Salsa for the event.

However, I also, in a moment of weakness, bought a quart of tomatillos at the market yesterday in order to make salsa verde.

Holy Crap that was a mistake. You ever see the huge variety of salsa verde recipes out there? Boil the tomatillos, broil the tomatillos, toss them straight into a blender. Man.

I may broil them, just because roasted flavour tends to go over well with this crowd.

Anyone got any guidance? Good recipies that have worked for you? I got a couple serranos and a couple jalepenos as well as some frozen cilantro and can get some fresh if need be.

I don't remember which recipe I used for mine,but for the love of all that is holy, don't add sugar. Tomatillos have more than enough naturally occuring sugar, and I blindly followed the recipe and ended up with a verde that was sweet like jam. Gross.

Not sure about tomatillos, but I generally grill most things that go into my salsas (peppers, tomato, etc)

I boil 2 jalapenos and half a decent sized onion, oh, and some garlic, for 5 minutes, toss in a good double handful of halved tomatillos, cook a little longer. Drain most of the liquid, add some salt, dump in food processor. As a bonus, if made the same day as guacamole, add a little avocado at this point.

Roasted tomatillos would also be good. Roasting is good for everything.
