Date: 2006-09-07 08:38 pm (UTC)I'm currently working with $1.44 a pound ones from the store. Not as good, or as cheap, but better than the 3.89 a pound I paid earlier when I was desperate for tomatoes in the middle of winter.
I'm currently doing this with them:
Halve and seed tomatoes
Put on foil lined cookie sheet.
Drizzle with olive oil and sprinkle with italian seasonings and salt
Cook on low oven for 2 hours (325ish)
Turn oven up to 400 for 20 minutes to char/carmelize
Peel off foil (this is why it's important to use the foil. You don't want to lose any of the nummy charred/carmelized bits that would normally stick to the cookie sheet)
throw into food processor and swirl into Mush
Serve on bread slices.
it's so good. I don't know how you'd preserve it (freezing probably) as we've never made enough to survive more than one sitting because we all love it.
